Bison is North America's native large ruminant — built for open grassland, not feedlots. The meat is leaner than beef with roughly half the fat, richer in iron, and carries a cleaner, slightly sweeter flavour that comes from an animal raised entirely on grass. Northfork Bison has been doing this since 1997, partnering with ranches across the Manitoba prairies to raise bison the way the land supports. Not a beef substitute. A different protein altogether.
