Every fillet in this collection is wild-caught off the Pacific coast and frozen at sea — meaning the cold chain starts on the boat, within hours of the catch, before the fish ever sees a dock. Sockeye salmon and Pacific cod, sourced through Organic Ocean in Vancouver and Ocean Wise certified for sustainability. The difference in texture and flavour is immediate.
